Easy Cheesy Ham & Potato Casserole Recipe

This yummy casserole takes only minutes to put together, bakes for an hour and is great for breakfast, lunch, or dinner.

Preheat oven to 350 degrees F

Spray a casserole dish with cooking spray 

Mix together in a bowl:

1 - 30 oz package frozen shredded hash brown potatoes
1 - 8 oz ham steak, diced
1 can Campbell's cream of potato soup
1/2 cup milk
1/2 cup sour cream
1 cup Parmesan cheese
1/2 cup shredded cheddar cheese
1/4 teaspoon fresh ground black pepper

Mix all ingredients and then spread into prepared casserole dish 

Sprinkle with additional 1/2 cup cheddar cheese. I also sprinkle just a pinch of dried parsley on top for color. 

Bake in 350 degree F oven for one hour or until bubbly. This recipe serves 4 +leftovers. You can easily double the recipe for more.

Optional ad-ins & alterations:

  • Sliced mushrooms
  • 1 cup of chopped broccoli
  • Substitute 8 oz browned cooked sausage for the ham
  • Substitute shredded Swiss cheese for half of the cheddar cheese or for the Parmesan cheese
  • Replace the Cream of Potato soup with Cream of Mushroom soup
