Apples, Sausage & Sweet Potatoes: A Savory Autumn Dish

This Savory Autumn Dish of sausage, apples, and sweet potatoes is a recipe that has been in my family for many years. As a matter of fact, my mother has been making it for as long as I can remember. 

It's a delicious, hot savory supper that's perfect for a chilly fall day. It only has the three main ingredients, takes little time to prepare, is full of rich flavor, and is even better the next day - if there is any left!


I love it because it is a true reflection of the fall season - fresh picked apples and sweet potatoes are seasoned with cinnamon and mixed together with sausage and then baked in a hot oven...it creates the most amazing aroma...


Ingredients & Directions

3-4 medium apples
3 large sweet potatoes  

2 pounds of sweet sausage

Peel and core the apples, cut into quarters and then cut in half again.

Boil the sweet potatoes just until they become fork tender. Remove from pot and carefully peel with a knife and cut into 1/2" slices. (You can use yams if sweet potatoes are not available in your area.)
Cook sausage in frypan with water or bake in oven until done. Remove sausage from pan and cut into coin-shaped slices. Save the sausage drippings.


Layer in a large oven-safe bowl:

Sausage and sweet potatoes on the bottom of the bowl, apples on top.

In a small bowl or 2 cup measuring cup mix:
1 Tablespoon flour

1/2 teaspoon salt
2 Tablespoons sugar
1/2 cup cold water
4 Tablespoons sausage drippings

Mix together above ingredients and then pour over top of the apples, sausage and sweet potatoes. 

Sprinkle top with cinnamon.
Cover with lid or foil and bake in 375° F oven for 45 minutes. 


Putting it all together


Ready for the flour mixture & cinnamon


Ready to bake! I top with tons of cinnamon!


After baking, gently fold ingredients once or twice to mix. Sauce will thicken upon standing. Serve with additional cinnamon. 



Sprinkle with lots of cinnamon! My sister gave me this cute little cinnamon bear. I love him!

Vintage Childhood Halloween Costumes from the 70's

Vintage childhood Halloween costumes from the 1970's were the best. The boxed character costumes, the dress-up school parties, trick or treat in the neighborhood...what could be more fun? Oh yeah, the candy! 

Nowadays with kids of my own, the rules sure have changed. No masks, or even face makeup are allowed at school past the elementary level. But outside of school and of course on Trick or Treat night in hometowns across the USA, ghouls abound.

I remember the plastic masks with the dayglo painted faces, the small slits in the plastic for eye, nose and mouth holes, and how your breath behind the mask would condensate, making your face damp and gross. I remember the stapled-on elastic string that never stayed on very long before breaking. 

But most of all I remember the thrill of dressing up, of laughing with friends, of going house to house in the cold autumn night, and getting to escape and be something different - whether scary or not -  even if just for a short while.
